Not on the list

The standard order includes a filet mignon, worth 30 of the 100 points. A porterhouse counts — the filet is the smaller side of the T-bone. What does not count is a kitchen with no tenderloin in it at all. The order cannot be placed, so there is nothing to compare. These are not bad restaurants. Several are excellent. They are simply playing a different game.

• Nubiani

  Koreatown, Manhattan

  Korean steakhouse, and the à la carte beef list is kkotsal, yangnyeom galbi, kkotdeungsim, anchangsal, jumulleok, neukgansal and chadolbagi. Anchangsal is skirt, not tenderloin — 안창살, not 안심. No cut on the menu contains any.

• Porteño

  Chelsea, Manhattan

  Menu aggregators still list a filet, which is out of date. The current menu shows the Lomito Completo is now top sirloin, and the only steak entrée is a sixteen-ounce rib eye.

• Sammy's Roumanian Steak House

  Lower East Side, Manhattan

  The menu offers a "Roumanian tenderloin." It is skirt steak, and always has been — the name is a running joke, partly because tenderloin is not a kosher cut. Ordering it would not produce a filet.

• St. Anselm

  Williamsburg, Brooklyn

  One of the best places to eat steak in the city, and genuinely missed. The beef list runs hanger, flatiron, Denver, NY strip and a shared ax-handle rib eye. Not one of those cuts contains tenderloin, and there is no porterhouse, so the standard order cannot be placed.

One location per restaurant. Visiting three Wolfgang's would say more about Wolfgang's consistency than about New York.

  Benjamin Steakhouse, two blocks away on E 41st, represents the group.

• Empire Steak House West 54th

  Midtown, Manhattan

  The E 50th Street branch represents Empire.

• Wolfgang's Steakhouse Tribeca

  Tribeca, Manhattan

  The Park Avenue branch represents Wolfgang's.

Checked, and gone. A few of these closed within months of the project starting, which is most of the argument for doing it now.

  Park Avenue South steakhouse closed in 2011.

• Angus Club Steakhouse
